Ingredients:
- 1 cup strawberries, hulled
- salt and pepper to taste
- 2 TBSPS fresh lemon juice
- 1 TBSP balsamic vinegar
- 5 fresh garlic scapes, chopped
- 1 inch of Vermont creamery goat cheese log
- Olive oil
Directions:
Pulse to blend and chop scapes in the bowl of a food processor or blender.
Take ½ cup olive oil……..drizzle in slowly, process to emulsify.
Delicious on a lettuce or raw kale salad, especially one with grilled chicken breast.
