Ingredients:
- 1 vidalia onion, chopped
- 8 garlic scapes, chopped
- 4+ Cups shelled peas
- 4 TBSP olive oil
- 1 inch piece of ginger chopped
- salt and freshly ground pepper
- 5-6 fresh mint leaves
- ½ cup half and half
- 2 Cups water or stock
- Lime juice
Directions:
Combine in stock pot over medium heat. Cook, stirring, for about 5-8 minutes (until onion starts to soften and scapes turn bright green.)
- 2 Cups water or stock
Add to onion mixture, keep over med-low heat for about 10 minutes (onions–translucent).
- 4+ Cups shelled peas Add to pot and cook 5 minutes.
Take off heat and add:
- 5-6 fresh mint leaves
- ½ cup half and half
Put contents of stock pot into a blender and process until smooth.
Drizzle with lime juice and additional olive oil.
