- One small onion
- Several medium tomatoes ( combo of red and yellow)
- Lots of fresh grated ginger
- One small sweet Vidalia onion
- A few small garlic cloves
- A dash of lemon juice
- Salt and pepper
Saute onions in oil.
Add in garlic, cook until fragrent.
Chop tomatoes, add to onions.
Add rest of ingredients, cook down to jam consistency.
Spice it up by adding a chopped jalepeno.
