Strawberry Goat Cheese Dressing


  • 1 cup strawberries, hulled
  • salt and  pepper to taste
  • 2 TBSPS  fresh lemon juice
  • 1 TBSP balsamic vinegar
  • 5 fresh garlic scapes, chopped
  • 1 inch of Vermont creamery goat cheese log
  • Olive oil


Pulse to blend and chop scapes in the bowl of a food processor or blender.

Take  ½ cup olive oil……..drizzle in slowly, process to emulsify.

Delicious on a lettuce or raw kale salad, especially one with grilled chicken breast.
