One Big Pot of Sauce


  • 1 large onion
  • 4-5 cloves of garlic
  • 1 large green pepper
  • 1 poblano or Hungarian wax pepper
  • 8-10 ripe tomatoes
  • 2 eggplants
  • 2-3 zucchini/summer squash
  • 1 bunch kale or swiss chard
  • ¼- ½ cup chopped fresh basil
  • salt and pepper


Put in ¼ cup olive oil in a deep pot: add chopped onion and finely minced garlic. As onion cooks, core and chop tomatoes, adding to the pot as you go.

Chop and add peppers as soon as your’re done with tomatoes.  Chop and add eggplants followed by summer squashes.  Chop and add kale.  Season with salt and pepper. Add fresh basil when it is at the consistency you like.

Top with grated cheese

Serve over pasta,  polenta, couscous or with good crusty bread.

Use as a pizza topping/calzone stuffing.
