Garlic Scape Hummus


  • 1 –  15 oz can of garbanzo beans or (2cups of cooked dried garbanzo beans)
  • 2 TBSPS tahini
  • 2 TBSPS  lemon or lime juice
  • olive oil to achieve a good consistency
  • ¼ cup of very finely chopped ( a food processor is nice) Garlic Scapes from Dimond Hill Farm!
  • Salt and Pepper to taste


First, very finely chop the garlic scapes. If you do this in a food processor, keep them in the bowl of the machine.

Add the beans, tahini, citrus juice, and salt and pepper. Pulse, adding olive oil, until it is the consistency you like….. chunky or smooth, to your taste.

Enjoy as is, as a dip. Or spread on sandwiches, dollop on salads, enjoy on a bagel, or eat with a spoon.
