Fresh Tomato Soup


  • 3 ½ pounds ripe tomatoes, cored
  • 4TBSP olive oil
  • 1 large sweet onion, chopped
  • 3 cloves garlic, smashed
  • 1 inch piece of fresh ginger, sliced
  • 1 tsp thyme
  • salt and freshly ground pepper
  • lemon juice


In large saucepan heat olive oil over medium heat;

Add onions, garlic, and ginger. Cook until onions just start to caramelize.

Meanwhile, roughly chop the tomatoes. Add to saucepan, along with thyme and salt and pepper.

Cook stirring until the tomatoes are fully submerged in their own juices.  Puree using an immersion or upright blender. Adjust seasoning, add a splash of lemon juice.

Good hot or cold
