Fresh Spring Pea Soup


  • 1 vidalia  onion, chopped
  • 8 garlic scapes, chopped
  • 4+ Cups shelled peas
  • 4 TBSP olive oil
  • 1 inch piece of ginger chopped
  • salt and freshly ground pepper
  • 5-6 fresh mint leaves
  • ½ cup half and half
  •  2 Cups water or stock
  • Lime juice


Combine in stock pot over medium heat.  Cook, stirring, for about 5-8 minutes (until onion starts to soften and scapes turn bright green.)

  •  2 Cups water or stock

Add to onion mixture, keep over med-low heat for about 10 minutes (onions–translucent).

  •  4+ Cups shelled peas    Add to pot and cook 5 minutes.

Take off heat and add:

  • 5-6 fresh mint leaves
  • ½ cup half and half

Put contents of stock pot into a blender and process until smooth.

Drizzle with lime juice and additional olive oil.
