Ingredients:
- Combination of New Red and Yukon Gold potatoes
- One Vidalia onion & one red onion, chopped
- Several small cloves of garlic
- Seasonings: Cumin, tumericm mustard powder, ginger, curry powder, nutmeg
Directions:
Simmer potatoes until tender in salted water.
Meanwhile sauté onions and garlic in butter until tender.
Season onions with: Cumin..tumeric..mustard powder…ginger..curry powder….nutmeg.
Put a few ladles full of potato water in seasoned onions. Drain potatoes, combine with seasoned onions. Add salt and pepper.
Add enough Contoocook Creamery whole milk to transform potato mixture into a silken soup.
Use a blender. Chill.
Adjust seasonings…. Enjoy!
