Corn Cakes

Ingredients:

  • 1 cup cornmeal
  • 1/3 cup flour
  •  ½ tsp baking soda
  •  salt and pepper
  • 2 eggs
  • ¾ cup milk
  • 2+ cups corn

Directions:

Mix dry ingredients.

Beat egg into milk.

Fold together, then fold in corn.

Heat olive oil in medium hot skillet, cook 3-4 minutes per side.
