Bean Salad


  • 1 pound green beans
  • 1 pound wax beans
  • ½ sweet onion
  • 1 hungarian wax pepper
  • 2 tomatoes or 1 pint cherry tomatoes
  • 2-3 TBSP lemon juice
  • 4-5 TBSP olive oil
  • 3 garlic scapes
  • 1 TBSP honey
  • fresh basil and parsley
  • salt and pepper


Trim beans and cook in well salted boiling water for no more than 4 minutes:  cool right away in an ice water bath;

Drain, put in bowl.

Very thinly slice onion and pepper, put in small bowl.

Make dressing: (lemon juice, olive oil, scapes, honey, herbs, salt and pepper)

Pour over onions and peppers to marinate.

Refrigerate beans and onions/peppers in their separate bowls.  About 1 hour before serving, combine them….

Top with chopped tomatoes and serve.
